total disappointment October 31, 2008 Worst purchase I have ever made. Wheel fell off of first model with first use. I should have taken a refund, but thought I'd give it another chance. Have had this model for several years, but can never get anything decently sharp, consequently very little use. Called customer service today, indicating that this has had almost no use. They politely offered to check it over or repair it for standard repair fees. It never ceases to amaze me, how people can try to sell you a third time with a straight face, even offered a replacement, at a fee in excess of $100.
There is also a lot of mixed signals as to whether to use stage one or not. In short, you feel you are using the item incorrectly, looking for burr etc. I even suggested that this item might be misaligned since first one literally came loose , and they may both be from same lot.(small cutlery shop, now out of business). Not even a suggestion to check the lot number to see if anything was defective from the beginning. Very courteous, but non-responsive customer service, hoping to profit from their mistakes.
Amazing knife sharpener! September 15, 2008 I've tried a host of different types of knife sharpeners over the years with very little luck. The Chef's Choice sharpener is amazing! I can have sharp knives everyday; what a difference!
A solid, solid sharpener August 30, 2008 The only reason this doesn't get 5 stars is that, at the end of the day, it's still over $120 (at least when I purchased it) for a knife sharpener. The quality of the item, so far, has been great. I have no complaints, the ease of use is there, and what little instructions you need are very clear. If money is not an object for you, you can pretty much call this a 5-star product.
Great Product August 23, 2008 I bought this product 2 years ago and couldn't be happier with it. It performs exactly as described. It's very easy to use and becasue of that I keep my knives sharp and that makes cooking much more enjoyable and much easier. I had one problem, the palstic guide on the front of the device failed but the company honored the three year warrenty and fixed it quickly and returned it to me. I highly reccommend this product.
Stirring Sharpener Story June 12, 2008 I've read the reviews both good and bad on this sharpener and for the life of me could not reconcile the two. So, based on the majority of the reviews being good, I bought it here from Amazon.
The end result, the sharpener is quite good, but the manual is somewhat misleading and if you follow the instructions in the manual exactly, it will not produce the results that you want. I read and re-read the manual before sharpening, did a practice test run before putting the knives through, so imagine my surprise when my Henckels Four Stars were not sharpening. However, when I passed a crummy little dinged up OXO knife through, it was sharpened as if it were brand new. So apparently, the sharpener was doing something, but I couldn't figure out how to get the OXO results on the Henckels knives.
Then I referred back to that wonderful Cook's Illustrated review which gave this sharpener a Highly Recommended rating. For those of you who don't know, Cooks Illustrated does not accept advertising and generally has pretty objective reviews of the products it tests. Cooks Illustrated said they passed their knives through 15 times before they became sharp. So that's what I did. 15 times, each knife. And then I sharpened them on a separate sharpening steel, per the instructions of Alton Brown (of Food Network fame).
The result, exceptionally sharp knives. Exceptionally. This product, when used in that manner, will produce very very sharp knives. Also, with what a professional knife sharpener charges, if you have several knives, like we do, after a few uses, this sharpener will pay for itself.
Why four stars then? The confusion caused by the unclear manual was somewhat frustrating. For this kind of money, this model should have a sharpening steel on it in addition to the motorized stage 2 sharpening wheel. Not perfect, but works very well.
